Fruity Sweet Potatoes

I don’t really measure anything, so this is for people who don’t like to follow exact recipes…

Sweet potatoes – say one medium per person

Oranges – Half an orange for each sweet potato you use

Dried apricots – about 4 for each sweet potato

Tart apples – Half a medium-sized apple per sweet potato

Chop sweet potatoes into chunks about 1 inch square and parboil about 10 minutes. Squeeze juice from oranges. Cut apricots into quarters. Dice the apples. Combine all in a greased casserole dish and bake at whatever temperature you have going for the rest of your dinner for 30-60 minutes or until everything is tender.
